French Onion Soup

 

French Onion Soup with a twist…


This cozy and comforting classic is made with red onions vs yellow onions and the result is a more complex, more deeply caramelized flavour. Top with buttery crispy bread and lots of gruyere cheese that gets bubbly and golden under the broiler.

[Serves 2]

Ingredients:

1 large red onion (or 2 small)

4 knobs of butter

salt & pepper

1/4 cup red wine

4 cups broth (beef is best but chicken works as well)

splash of balsamic vinegar

baguette or bread of your choice (sliced or cubed)

gruyere cheese, grated

Preparation:

1. Melt 2 knobs of butter in a pot and toss in sliced onions over medium heat. Season with salt and stir quite frequently for 20 min (or until really golden brown).

2. Add wine/port/Madeira, stock, stir and bring to a bubble. Option to add a sprig of thyme here - reduce to low and simmer uncovered for 20 min.

3. Meanwhile, slice baguette and toast in a pan with 2 knobs of butter until golden and crisp on each side. Set to the side on paper towel to rest.

4. Once soup has reduced, add balsamic, salt and pepper (taste to make sure flavour is where you want it).

5. Pour soup into oven-safe bowl and top with toasted buttery baguette and grated gruyère cheese.

6. Place bowl on a baking sheet and into the oven under the broiler for about 5 min (or til bubbly and golden).

7. Finish with cracked black pepper and enjoy!
