Chicken Milanese
Ingredients:
2 Chicken breasts or 4 cutlets
2 eggs
1 cup fine breadcrumbs (store bought or can make your own)
1 cup flour
Salt & Pepper
Neutral oil (canola, vegetable, etc)
Lemon
Basil
Preparation:
1. Prep your stations: whisk the eggs in one bowl, add breadcrumbs to a second, and add flour to a third.
2. If you’re using larger chicken breasts, you can slice horizontally to create two thinner pieces (or use chicken cutlets). Place between two layers of plastic wrap and pound lightly until they’re all the same thickness. You don’t want them paper thin, rather about a ¼” thickness. Season generously with salt.
3. Dredge the chicken cutlets in flour, then dip in egg, and finally coat in breadcrumbs (press to make sure they’re coated with the breadcrumbs and they won’t fall off). Place on a baking tray until ready to fry.
4. In a pan over medium heat, add some neutral oil and heat up until it glistens. Sear the chicken for a few minutes on each side until golden brown. Hit with salt while still hot. Squeeze of lemon to finish.
