Brown Butter Orzo with Greens & Feta

 

A one pan dish that is BURSTING with flavour…

You know I’m a sucker for a one pan dish. We can build so much flavour along the way + it’s easy clean up. Also, this works so well for meal prep! The leftovers are sooo tasty (either warm or cold - I heated up the next day and topped with my soy maple salmon mmmm).

You can use whatever greens you have in your fridge (this recipe is totally meant to improvise on), or go with my recommendation here.

Ingredients:

~1 cup chopped kale
~1 cup chopped broccoli
~1 cup chopped asparagus
1/2 onion
3 cloves garlic
1 cup Orzo
2 cups Stock
Zest of 1 lemon, juice of ½
½ cup grated parmesan
Feta to sprinkle on top
Fresh dill
4 tbsp Butter + 2 tbsp olive oil
Optional Red Pepper Flakes

Preparation:

1. In a pan, brown 3 knobs of butter over medium heat. As soon as it gets golden, add the cup of orzo and lower the heat. Stir so it all gets coated and nicely toasted. Remove from the pan and set to the side for later.

2. In the same pan, add olive oil and another knob of butter. Sautée onions, finely chopped kale, broccoli, asparagus. After a minute add in garlic. Add salt, lemon zest and red pepper flakes then sautée until kale has slightly wilted (about 3 min).

3. Add orzo back inside in the pan and your stock. Bring to a bubble, then reduce heat and let simmer (covered) until liquid is absorbed (about 10-12 min).

4. Mix well and finish with lemon juice, parmesan, feta, dill.
