BLT Pesto Orzo Bowl
Ingredients:
8-10 strips of bacon
1 package orzo (16 oz)
~1 cup cherry tomatoes, halved
~1 cup mozzarella pearls
1 big handful of spinach
~1/2 cup pesto
juice of 1 lemon
salt & pepper
Preparation:
Preheat oven to 400 degrees and roast bacon on a baking sheet for 15 minutes (or until desired crispiness).
Boil orzo and rinse with cold water to stop the cooking.
